Fatayer are small savory pies, like so many in a Lebanese mezze, they come in different shapes, fillings ... and names!
“Fatayer" are filled with vegetables, more precisely herbs, spinach or white beet. A green stuffing, seasoned with lemon or
, and some finely chopped onions.
Fatayer are in triangular shapes, cooked in the oven, and served as an appetizer, or as a part of a "mezze".
For the dough500 g of flour (white or a mix a half white and half whole wheat flour`)
1 tsp yeast
For the stuffing1 kg of spinach
2 onions, chopped fine
2 Tsp sumac
1 tomato, diced fine
Salt and pepper
Number of servings
Of which saturated
GOOD SOURCE OF
Knead the flour with enough water to form dough, add the salt and the yeast (dissolved in tepid water). Leave to rest for an hour.
To prepare the filling, chop finely the spinach, rub the onion with sumac, and add to the spinach and tomato.
Season to taste with salt.
Roll the dough thin, cut in circles (less than 10 cm), and put a tbsp of stuffing in the center of a circle (try to have the stuffing with theleast juice possible).
Close from 3 sides, to form a triangle, and put each pie in a baking tray.
Cook in a hot oven, at 180 C for ten minutes oruntil golden, leave to cool and serve cold.
Whole wheat flour can be used instead of a combination of white (refined) and whole wheat flour; Even "fortified" white flour does not contain the macronutrients of the wheat's bran and germ especially Protein and Fiber
