Leg of lamb Roast | Seasonal Recipes

Fakhde is a traditional lebanese dish, we mainly eat on big occasions such Eid el Adha, Christmas or big family gatherings.
  • 1 ½ kilo leg of lamb with bone
  • 1kg without
  • 1 onion
  • 1 Tsp of vegetable oil
  • 1 carrot
  • 1 celery stem
  • One pich of pepper
  • One pinch of all
  • Spice
  • 2 cinamon sticks
  • 1 pinch of salt
  • 1 bay leaf
  • Rice mixture:
  • 200 gr of mince meat
  • 1 Tsp of vegetable oil
  • 1 onion
  • 2 cups of rice
  • One pinch of seven spices
  • One pinch of salt
  • One pinch of cinnamon
  • 50gr of peeled pistachios
  • 50gr of pine nuts
  • 50gr flaked almonds
  • 1 Tsp of butter
  • How to cook lamb: Place the oil in the pressure cooker and fry meat on all sides. Add water and boil.

  • When it boils discard the froth on the top by skimming or simply throw all and start over.
  • Refry the meat add the chopped onion, celery and carrot.
  • Add the cinnamon stick salt all spice and bay leaf, cover with water and close pressure cooker.
  • 2 hours on a low flame.
  • Then place in the oven to roast for an hour.

the rice:

  • Put vegetable oil in casserole, fry the chopped onion the mince meat and the spices.
  • Add the seven spices the cinnamon and salt.
  • Once all is cooked add two cups of stock from the pressure cooker and cook for 35 minutes on a low flame.
  • Remove the leg of lamb from the pressure cooker sift the onion and carrots and celery and spices.
  • Keep the meat aside. With the left over juice keep one cup for sauce the other 2 for the rice, if not enough add water before sifting the meat.

The sauce:

  • Add a tsp of corn starch to the stock let it boil to thicken.
  • Place butter in frying pan and fry all the almonds pine nuts and pistachios.
  • Once the rice is cooked place in a serving dish, cover with meat and then the fried almonds and pine nuts and pistachios.
