There are many methods to make and serve Kebbeh and it tastes differently in every method. You can add it to some dishes like Arnabiyyeh and Labniyyeh and tomato soup just like in this recipe.

INGREDIENTS

  • 1 1 kg lamb shanks (with bones)
  • 2 3-4 kg ripe tomato
  • 3 2 tbsp tomato paste
  • 4 2 tbsp chili paste
  • 5 Stuffed Kebbeh patties (3 patties per serving)

DIRECTIONS

  • 1 Peel tomatoes and deseed them then chop them.
  • 2 Leave tomatoes to simmer until the sauce thickens up. Process tomatoes in an electrical or a manual food processer.
  • 3 Add tomato paste and chili paste and mix well.
  • 4 Boil meat until well done then get rid of the bones.
  • 5 Pour meat stock onto the tomato purée so you get a soup.
  • 6 Boil soup on medium heat for half an hour or more until soup thickens up a bit.
  • 7 Drop Kebbeh patties in hot water for 5 minutes then drain them and add them into the soup.
  • 8 Let soup simmer until Kebbeh is cooked through.
